NYE Chorizo Black Bean Dip

Every year for NYE our family does something super, duper exciting!  We build a fort, with lights and watch movies. I have to admit, I absolutely love it!  I am not at all a fan of big crowds and spending time with my family is right where I always want to be. Along with our fort I make lots of yummy food. This year I created a Chorizo and Black Bean Dip that my husband loves so much he ate and ate till he couldn’t eat anymore.

NYE Chorizo Black Bean Dip

1 lb. chorizo (make sure it’s the good kind)

1 can black beans

1 can Tomatoes and diced jalapeños

1/2 cup sour cream

2 cups shredded cheese

Brown chorizo and drain excess grease. Drain all extra juice from corn, tomatoes and beans. Pour these into the pan of chorizo along with 1 cup of cheese and the sour cream. Stir mixture and simmer for five minutes. 

Place mixture in large pan and cover with remaining cup of cheese. 

Bake at 350 degrees for 15 minutes, until cheese is melted. Serve with tortilla or potato chips.
