My mom introduced us to this Taco Soup recipe when I was a teenager. I’ve always loved everything and anything to do with tacos, so naturally, I loved it!
The original recipe calls for canned tomatoes, but I was all out and had to improvise with some salsa. It was sooo good, I might make it this way from now on.
Recipe:
1 lb. ground beef, browned with half pkg. of taco seasoning
1 can kidney or black beans
1 can of corn, undrained
1/2 can of Pace medium salsa or 1 can stewed tomatoes
1 small can tomato sauce
Rest of taco seasoning pkg.
3/4 cup water
Mix all ingredients together in a large pan or crockpot. Simmer for 15 min on stove or leave in crockpot on low for a few hours (length really doesn’t matter as long as it’s not beyond 6 hrs and is warmed thoroughly)
Top with sour cream, shredded cheese and tortilla chips.
