Aunt Bertie’s Chicken Broccoli Bake

This dinner has been one of my very favorites since I was a little girl.  When I had my first boy, I was so excited for my mom to come and bake this for me.  As many of you nursing moms may know that was a horrible idea.  Broccoli gives babies gas and I had a fussy boy after that.

Either way, I still love this recipe and so does my boy, who funny enough, loves broccoli as well!

Baking tip: If you would like your broccoli to be more firm, do not boil prior to baking in the oven.


1 whole chicken or 4-6 chicken breasts

Large batch of broccoli 2-3 heads


2 cans cream of chicken soup

1 can evaporated milk

1/2 c shredded cheese

2 Tbsp. lemon juice

1/2 c. sour cream

Mix together.

Put chicken in large pot, cover with water.  Bring to boil, simmer for one hour with lid on.

Take chicken out of pan and let cool before breaking into pieces.  While chicken is cooling, boil broccoli in large pan until soft.  Place broccoli in the bottom of a 9×13 pan, then cover with chicken.  Pour sauce over and bake at 350 degrees covered for 1 hour.
