March Madness Munchies Menu

My husband is not a man who takes very many days away from work, but there has been two consistent days he has taken off every year, the Thursday and Friday of March Madness.

I get it. My husband is an avid sports lover and just wants to watch his games in peace and with a lot of food.

Being the wonderful wife that I am I have created this March Madness Munchies Menu for him over the next couple of days.

Breakfast Nachos-Breakfast for Day One

4 potatoes

1 tsp. Olive Oil

1/2 lb. breakfast sausage

1/2 pkg. bacon

2 cups shredded mild cheddar cheese

Salt and Pepper to taste

1 cup Jalapenos

2 Eggs

Dice your potatoes into small pieces. Place Olive Oil into a large skillet, turn the pan onto medium/high heat. Place the potatoes in the pan and crisp the potatoes for five minutes. Turn the heat to low and bake potatoes for about twenty minutes until they are cooked. Remove the potatoes and place on a large plate.

Brown the sausage and cook the bacon in the skillet. Drain any excess fat.

Place the meats on the potatoes.

Cooks eggs as you would desire, scrambled, over easy, etc.

Place eggs over the meat, cover with the cheese and jalapenos.

Tater Tot Breakfast Casserole-Breakfast for Day Two

Grease a large casserole dish.

Place in dish

1/2 bag frozen tater tots

8 well beaten eggs with 1/8 c. Milk

1/2 lb. browned sausage (use remainder from previous recipe)

Season with salt and pepper

Cover with 1 c. Shredded cheese

Bake at 415 degrees for 25-30 minutes.

This can be prepared the day before and placed in the fridge, covered, until ready to bake.


Fast French Toast- Breakfast Day Three



Buffalo Breakfast Eggs Benedict-Breakfast Day Four

1 pkg. English Muffins

6 eggs

2 Avocadoes

6 Slices Turkey

1 cup Buffalo Sauce

1 pkg. Hollandaise Sauce


Toast English Muffins, cook eggs in skillet, over easy. Slice avocadoes and prepare Hollandaise sauce according to the directions on the package.

On the toasted English Muffin place the turkey, egg, hollandaise, a small amount of the buffalo sauce and the avocadoes on top.


Pizza Quesadillas:

6 Flour Tortillas

2 cups of Mozarella Cheese

1 small can of Tomato Sauce

1 Tbsp. Olive Oil

1 pkg. pepperoni

1 pkg. pre-cooked sausage

1 can sliced black olives

In a large skillet place 1 tsp of Olive Oil, warm skillet to medium heat, place tortilla in the skillet. Place 1 tbsp. of tomato sauce on the tortilla followed by 3/4 c. cheese, desired amount of pepperoni, sausage and olives. Or any other toppings you would prefer. Place second tortilla on top. Bake until tortilla is browned on both sides and cheese is melted.

Repeat two more times to make 3 quesadillas.

Chicken Poppers

3 large chicken breasts

1 pkg. cream cheese, softened

1 can green chili peppers or jalapeños, whichever you prefer

1 cup Mozarella Cheese

1 cup Panko Breading

1 tsp. salt

In a crockpot or pan bake your chicken, after the chicken has baked and cooled a bit, place in a blender (small pieces at a time) to shred into small pieces.

In a large bowl mix the chicken, cream cheese, peppers, cheese and panko. Stir until the entire mixture is mixed together. Scoop out a tablespoon of the mixture and roll into a ball.

Place each ball on a lightly greased baking sheet. Bake at 375 for 10-15 minutes, until browned, serve immediately.

Variations: Buffalo Chicken Poppers


Do the same steps as above, adding 3 tablespoons buffalo wing sauce and 2 tablespoons of blue cheese. 

Bake as mentioned above and enjoy the cheesy chick goodness!

Side note: if you would like more spice add more buffalo sauce or more cheese add more as you would like! You may need to add more breading as well to maintain the ball shape. 

Pasta Salad

4 c. cooked rainbow pasta

1 small bunch green onions

12 cherry tomatoes, sliced in half

1/4 cup Italian Dressing

1/4 tsp. garlic powder

1/2 tsp. oregano

1/2 tsp. basil

1/8 tsp. pepper

1/2 tsp. salt (optional)

Paprika, sprinkled on top, optional

Toss ingredients together and medium bowl.  Sprinkle with paprika, cover and refrigerate until ready to serve.  You can really have fun with this recipe, I also like to add spinach, celery, broccoli, cucumbers, mushroom, peppers, cheese and ham cubes.


Greek Pasta Salad

One pkg. Rainbow Noodles

One kielbasa sausage

1/2 c. Roasted peppers

1 can kalamata olives

1c. Feta Cheese

1/4 c. Pepperchinis

1 large tomato, diced

1/4 c. Italian Dressing

Begin by softening noodles in a large pot. Directions will be on the back of the box.  While the noodles are boiling, cut up the sausage into small slices and heat with a small amount of oil for 10 minutes.

After noodles are softened place in a strainer and run cold water over them to cool.

Once cooled place in a large bowl with the remainder of ingredients.

Stir all ingredients together.


Pulled Pork Gravy Sandwiches

1 Pork Tenderloin

2 cups Water

1/2 pkg. Onion Mix

1 pkg. Pork Gravy

1 pkg. hamburger buns

Place all ingredients in a crock pot and bake on low for six hours. If the tenderloin is frozen begin crockpot at high and turn to low after 3 hours.

Remove the tenderloin from the crock pot and shred with a fork. Once the meat is shredded, place on the buns and eat!


Dinner on St. Patrick’s Day!

Corned Beef and Cabbage

1 Corned Beef with included spices

1 head of cabbage, sliced into small pieces

1 pkg. of small carrots

6 Yukon Gold Potatoes, quartered

1.5 cups Water

In a crockpot mix all ingredients, bake on low for 5 hours.

Totilla Roll-Ups

3 Flour Tortilla

1 pkg. Cream Cheese

1 can Black Olives, sliced

6 slices of Ham (lunch meat style)

1 cup shredded cheese, I usually use the Mexican Blend

In a medium bowl mix the cheeses and olives (juice included) stir until well mixed.

Place mixture on tortillas and spread evenly into a flat layer. Cover each tortilla with two slices of ham and roll up like cinnamon rolls.

Slice into small pieces.

Divide and serve.

Homemade Pizza

Pizza Dough

3 c. warm water

1 Tbsp. sugar

1 Tbsp. yeast

1 Tbsp. oil

2 tsp. salt

4-6 c. flour

Mix together in order given.  Knead dough a few minutes and let sit 10 minutes.  Flatten out on greased pizza pans.  Makes 2 large pizzas or 1 pizza and bread sticks.  Put on pizza sauce and desired toppings.  Bake 400 degrees for 20-25 minutes.

Pizza Sauce

1 – 15 oz. tomato sauce

1/4 to 1/2 tsp. each garlic powder, onion powder, chili powder, Italian seasoning, salt and pepper.
