Fast French Toast
This French Toast is made almost daily in our home. It’s super simple and my boys love it!  I also made some Banana Bread French Toast this morning. Using the banana bread I made on Sunday. Hubby loved it!  I hope you do too.

Swedish Pancakes – Like crepes, but Swedish!

Mix in blender:

2 c. milk

3 eggs

3 Tbsp melted butter

1 1/2 c. flour

2 Tbsp sugar

1/2 tsp salt

Pour small amount of batter onto hot, buttered griddle to make a thin pancake like crepes.  When lightly browned on under side and yellowish on top flip over and lightly brown on the other side.  Serve immediately with jam, jelly, powdered sugar, syrup, cream cheese or any other topping desired.

Fruit Glaze – This glaze goes wonderfully with the Swedish Pancakes!

2 c. of any kind of berries or peaches

1/2 c. water

1/2 to 1 c. sugar


In a sauce pan, place berries, sugar and water.  Bring to a boil, lower heat to a simmer and put on lid to cook the fruit.  When soft mash, put 1/8 c. of cold water in a cup and add 1 Tbsp. cornstarch.  Mix.  Pour into boiling mixture, stirring the whole time, until it thicken.  It is important you do not stop stirring!  Remove from heat and enjoy on Swedish pancakes, pancakes or waffles.

Sunday Morning Rolls – Much like cinnamon rolls, but easier to make!

Mix together:

1/4 c. oil

1 egg

1/3 c. milk

Then add:

1 1/2 c. flour

1 3/4 tsp baking powder

1/4 tsp salt

1/4 c. sugar

Mix well and knead.  Roll out on floured cupboard to 1/4 inch thickness.

Mix: 1/4 cup sugar, 1/2 tsp. cinnamon and 1/8 cup melted butter.  Spread on top and roll up the dough like cinnamon rolls.  In an 8×8 or 9×9 pan mix 1/8 cup melted butter and 1/8 cup nuts (if desired).  Cut rolls and place in pan.  Bake at 375 degrees for 25-30 minutes.


Tater Tot Breakfast Casserole – Like hash browns in your omelet.

Grease a large casserole dish.

Place in dish

1/2 bag frozen tater tots

8 well-beaten eggs with 1/8 c. Milk

1/2 lb browned sausage

Season with salt and pepper

Cover with 1 c. Shredded cheese

Bake at 415 degrees for 25-30 minutes.


Mom’s Coffee Cake – The best coffee cake in the world.

Preheat over to 375 degrees

Mix together:

1/4 c. oil

1 egg

1/2 c. milk

1 1/2 c. flour

3/4 c. sugar

2 tsp. baking powder

1/2 tsp. salt


1/2 c. brown sugar

2 Tbsp. flour

2 tsp. ground cinnamon

2 Tbsp. melted butter

Place batter in a greased 8×8 pan,  cover with the topping mixture and bake at 375 for about 25 minutes.

Banana Bread
I jotted down this Banana Bread recipe one day from my mother. There are so many occasions when I have needed a recipe and I call her up. She is the best baker I know and a lot of these recipes are from her. Thanks, Mom!!

To add some clarification, I use 3-4 bananas per recipe, make sure the butter is softened and I often use half the amount of sugar with 1/2 cup of applesauce to make the bread more moist.
