Also known as, Mexican Wedding Cookies or Russian Teacakes
1 c. butter, softened
1/2 c. powdered sugar
1 tsp. vanilla
2 1/4 c. flour
1/4 tsp. salt
3/4 c. finely chopped nuts (I like pecans)
Heat oven to 400 degrees. Mix butter, powdered sugar and vanilla. Stir in flour, salt and nuts. Shape into 1 inch balls, place on ungreased cookie sheet. Bake until set, but not brown, about 8-9 minutes. Roll in powdered sugar while warm, cool. Roll in powdered sugar again.
