Sour Cream Sugar Cookies – My favorite Christmas cookies!

1 c. sugar

1/2 c. butter softened

1 egg

1 tsp. vanilla

2-2/3 c. flour

1 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. salt

1/4 tsp. ground nutmeg

1/2 c. sour cream

Heat oven to 425 degrees.  Mix sugar, butter, egg and vanilla.  Stir in remaining ingredients.  Divide into three equal parts.  Roll each part 1/4 inch thick on lightly floured surface.  Cut into desired shape with cookie cutters.  Place about 1/2 inch apart on ungreased cookie sheet.  Bake until no indentation remains when touched. 6-8 minutes.



Spritz Cookies – These cookies melt in your mouth!

1 c. butter, softened

1/2 c. sugar

1 egg

1 tsp. vanilla

1/2 tsp. salt

2 1/4 c. flour

Heat oven to 400 degrees.  Mix butter and sugar.  Add egg, vanilla and salt,  Stir together.  Use a cookie press or Ziploc bag with edge of corner cut off to place cookies on an un-greased cookie sheet.  Bake until set, but not brown about 6-8 minutes.

Mexican Wedding Cookies or Russian Teacakes – Powdered sugar makes these cookies the ultimate dessert!

1 c. butter, softened

1/2 c. powdered sugar

1 tsp. vanilla

2 1/4 c. flour

1/4 tsp. salt

3/4 c. finely chopped nuts (I like pecans)

Heat oven to 400 degrees.  Mix butter, powdered sugar and vanilla.  Stir in flour, salt and nuts.  Shape into 1 inch balls, place on ungreased cookie sheet.  Bake until set, but not brown, about 8-9 minutes.  Roll in powdered sugar while warm, cool.  Warm in powdered sugar again.



Grandma Leacock’s Chocolate Cake

Preheat oven to 350 degrees.

1 1/4 c. sugar

1/2 c. butter

2 squares melted chocolate or 6-7 Tbsp. cocoa

2 eggs

1/2 c. milk

2 c. flour

1 tsp. vanilla

1 1/2 tsp. cream of tartar

1 tsp. salt

Mix sugar and shortening until smooth, add chocolate, eggs and milk.  Mix.  Add flour, vanilla, cream of tartar and salt.  Batter will be thick.  Last, boil 3/4 c. of water and add 1 tsp. baking soda to the boiling water, dissolve.  Add to batter slowly while mixer is on its lowest setting.  Pour into greased 9×13 pan and immediately put into the oven.  Bake for 25-30 minutes.

My Recipe Changes:

I used pecans instead of almonds. My dad is allergic to pecans, walnuts and hazelnuts so my mom has to use almonds. We have no know nut allergies here. Yay!

For the love of all whipped cream. Use REAL whipping cream. The kind you buy in the milk section. If you’re not familiar with this cool whip will work. Real whipped cream is just the bees knees. Just don’t forget to add sugar to your top layer of whipped cream.

I only used one package of chocolate pudding. I think it’s a bit more balanced this way.
