Taco Soup – A family favorite!

1 lb. ground beef

1 pkg. taco seasoning or chili powder

1 – 28 oz. can stewed tomatoes

1 – 15 oz. can corn, undrained

1 – 8 oz. can tomato sauce

1 – 15 oz. can kidney or black beans

3/4 c. water


Tortilla chips, sour cream, shredded cheese

Brown ground beef with 1/2 of seasoning package, drain grease and pour into soup pot.  Add rest of ingredients to pan, except toppings, bring to a boil, reduce heat and simmer for 15 minutes.  Add toppings and serves.

This can also be made in a crock pot!


Homemade Family Pizza – Family pizza night has never tasted better!

3 c. warm water

1 Tbsp. sugar

1 Tbsp. yeast

1 Tbsp. oil

2 tsp. salt

4-6 c. flour

Mix together in order given.  Knead dough a few minutes and let sit 10 minutes.  Flatten out on greased pizza pans.  Makes 2 large pizzas or 1 pizza and bread sticks.  Put on pizza sauce and desired toppings.  Bake 400 degrees for 20-25 minutes.

Pizza Sauce

1 – 15 oz. tomato sauce

1/4 to 1/2 tsp. each garlic powder, onion powder, chili powder, Italian seasoning, salt and pepper.



Aunt Bertie’s Chicken Broccoli Bake – An old-fashioned family recipe of ultimate comfort food.

1 whole chicken or 4-6 chicken breasts

Large batch of broccoli 2-3 heads


2 cans cream of chicken soup

1 can evaporated milk

1/2 c shredded cheese

2 Tbsp. lemon juice

1/2 c. sour cream

Mix together.

Put chicken in large pot, cover with water.  Bring to boil, simmer for one hour with lid on.

Take chicken out of pan and let cool before breaking into pieces.  While chicken is cooling, boil broccoli in large pan until soft.  Place broccoli in the bottom of a 9×13 pan, then cover with chicken.  Pour sauce over and bake at 350 degrees covered for 1 hour.




Spicy Tenderloin Lettuce Wraps with Mango Cilantro Dressing – Healthy and delicious!

1 Pork Tenderloin

1 cup Spicy salsa

One head Romaine Lettuce

1 cup Shredded Carrots


1/2 bag Frozen Mangoes

1/2 bunch Cilantro

3/4 c water

Place in crockpot one tenderloin with your choice of spicy salsa.
Cook on low for a minimum of six hours, until meat is thoroughly cooked.

After pork is cooked shred the meat and place on your pieces of lettuce that have been washed and dried.

Place carrots on top of the meat.

For the dressing place both items in blender, with water.

Blend until well mixed. Place on top of carrots and pork.

Then, eat up!


Tater Tot Sloppy Joes – Simple and delicious!

1 lb. browned hamburger mixed with one jar of sloppy joe mix

Cooked tater tots

Place sloppy joe mix on tater tots and done!

We also served ours with roasted cauliflower and broccoli. My mama taught me to always have your veggies or fruit with dinner. 😀




The Best Potato Soup – My husband’s favorite winter meal.

5-6 potatoes, peeled and diced

1/4 c. Butter

1 c. Flour

2 chicken bouillon cubes

6-8 cups of milk

1 can of corn

Thick ham, diced. I use the pre-cut ones, it’s just easier.

After peeling and dicing the potatoes, place in a pan of water and boil for about 20 minutes. Be sure not to boil them for too long, just until soft. We’re not making mashed potatoes 😉.

While your potatoes are boiling melt your butter in another large sauce pan. Add the flour and milk and stir, stir, stir! Do not stop stirring the milk, flour and butter mixture. Bring heat to med/high and keep stirring until the mixture has thickened to soup consistency. It takes some time, so don’t get too antsy. While you are stirring add the bouillon cubes to the mixture.

🎶Just keep stirring, just keep stirring, just keep stirring, stirring.🎶

Once you have your soup consistency immediately remove from the heat. Check your potatoes. If they are ready drain the water and add them to your soup. Next add the ham and corn (make sure you drain it!)

Voila! You are done. I also like to add about a cup of cheese to the mixture, but that is optional.


Simple Chili Recipe – Easy for those busy nights
Last night I made this super simple chili recipe and my boys really loved it!

One pound of ground beef

1 32oz can of Chili Beans in Sauce

1 32oz can of Tomato Sauce

1 16oz can of Rotel (store brand works as well)

1 package of Chili Mix

1 tsp Garlic Powder

In a large soup pan brown your ground beef with the garlic salt.

Drain excess grease and return to pan.

Add all remaining ingredients, stir and simmer until warm.
We literally had half hour until bedtime last night so I whipped this up on a whim. However, if you plan ahead you can also make this in the crock pot and let it simmer all day. That would taste even better!

Top with cheese, sour cream or whatever you would like.


Folded Burritos  – Because they’re the richest burritos you will ever have!

In our home this is how burritos are made. I know, I know it’s not a real burrito, but these are how ours are made.

1 lb ground beef

2 TSP taco seasoning

1 cup rice

1/2 cup salsa

1 small can retried beans or black beans

1 c. Cheese

Extra large tortillas (make sure they are the biggest ones possible or this recipe won’t work)

4-6 tostadas, one for each burrito you want to make

In a large skillet brown your ground beef, add the taco seasoning while browning. After browned, place on a plate with a paper towel on the bottom.

Make your rice (this is a great way to use any left over rice you may have) add the salsa to the rice.

Warm your refried or black beans

On your extra large tortilla layer your refried beans, rice, ground beef, tostada and cheese.

Fold the tortilla around the tostada and place on the frying pan you used to brown the ground beef. Turn heat to medium. Bake your burrito until lightly browned on both sides.


 Top your burrito with sour cream, tomatoes and anything else the sounds delicious.

Then, stuff yo’ face!!

Chicken and Black Bean Bake – A simple dinner to put together!

Pre-heat oven to 375 degrees

1 pkg. Chicken Tenderloins (thawed)

1 cup Brown Rice (uncooked)

1 can Rotel

1 can Black Beans

1 can Chicken Broth

2 cups cheese

Beginning with rice, place all items, except cheese, in a non-greased 9×13 pan. Top with the cheese.

Cover with foil and bake for one hour. Half way through the baking check your dish and remove the aluminum foil. Continue baking.

If you are someone who does not like canned foods substitute with diced tomatoes, peppers and reconstituted kidney beans.

Chili Macaroni and Cheese – My son’s favorite dinner!


1 lb. ground beef browned with half pkg. of Chili Seasoning

1 can Rotel

1 pkg. noodles

1 can Black Beans (you can also use chili beans or kidney beans, this is just what we had) rinse and drain the beans.

2 cups shredded cheese

1 8 oz. can of tomato sauce

Remainder of Chili Seasoning Package

After browning the ground beef, drain grease and set aside. In a large pot soften your noodles according to the noodle package.

After straining all excess water add the remaining ingredients and stir until the cheese is melted.


Cranberry Glazed Pork Tenderloin – My favorite dinner! Tastes like an early Thanksgiving meal!

1 can cranberries

1 Tbsp Montreal Steak Seasoning

1 pork tenderloin thawed (can use frozen as well)

Place all ingredients in a crock pot and cook on low for six hours. Stir cranberries so they are spread evenly.

**if you use a frozen pork, cook on high and be sure to flip the pork over.

After pork is done cooking, place the sauce from the crockpot on top for the glaze.

Greek Pasta Salad – The most-liked dish on our website!

One pkg. noodles

One kielbasa sausage

1/2 c. Roasted peppers

1 can kalamata olives

1c. Feta Cheese

1/4 c. Pepperchinis

1 large tomato, diced

1/4 c. Italian Dressing

Begin by softening noodles in a large pot. Directions will be on the back of the box.  While the noodles are boiling, cut up the sausage into small slices and heat with a small amount of oil for 10 minutes.

After noodles are softened place in a strainer and run cold water over them to cool.

Once cooled place in a large bowl with the remainder of ingredients.

Lentil Soup – Healthy, simple and delicious!

Mix in a crock pot:

1/2 bag Lentils

2 80z. cans Chicken Broth

1 8oz. can Diced Tomatoes

1 8oz. can of Black Beans

Two uncooked Pork Chops

1 tsp. salt

1/2 tsp. pepper

Bake on low crock pot setting, for at least six hours.
