Pasta Salad – This pasta salad is perfect as the main or side dish.
4 c. cooked rainbow pasta
1 small bunch green onions
12 cherry tomatoes, sliced in half
1/4 cup Italian Dressing
1/4 tsp. garlic powder
1/2 tsp. oregano
1/2 tsp. basil
1/8 tsp. pepper
1/2 tsp. salt (optional)
Paprika, sprinkled on top, optional
Toss ingredients together and medium bowl. Sprinkle with paprika, cover and refrigerate until ready to serve. You can really have fun with this recipe, I also like to add spinach, celery, broccoli, cucumbers, mushroom, peppers, cheese and ham cubes.
Taco Salad – Perfect for a simple weeknight meal!
1 head of lettuce, cut or shredded into bite-size pieces
1 lb. ground beef, browned with taco seasoning and grease drained
2 c. shredded cheese
1-2 tomatoes, diced
1 can of kidney or black beans rinsed and drained
1 can of corn (optional)
Thousand Island Dressing
Mix all ingredients in a large bowl, and add the toppings. This can be served as the main dish!
Pomegranate Salad – We make this every year for Thanksgiving dinner!
2-3 golden delicious apples
1/2 c. sugar
2 Tbsp. cornstarch
2 c. orange juice
1 pint whipping cream (optional)
Mix sugar and cornstarch in a small sauce pan. Add orange juice and cook until thickened. While the sauce cools, peel pomegranates and slice apples into bite size pieces. Place in bowl and add orange sauce. Used whipped cream for topping, if desired.
